Happy Husband Casserole

Per several requests/inquiries here is the Happy Husband Casserole in all its glory.

6-8 chicken breasts, cooked, boned and diced

2 cans Cream of Chicken soup

1 8 oz. carton sour cream

¾ c. margarine, melted

1stack Ritz crackers

2 tsp. Poppy seeds

Layer chicken in a greased casserole dish. Combine soup and sour cream; spoon over chicken. Put crushed crackers on top. Pour melted margarine over crackers and sprinkle with poppy seeds. Bake at 350 degrees for 30-40 minutes.

OH Dear God! That is the only meal I know how to cook, we use water chestnuts instead of poppy seeds but I'm telling you...this is weird *insert funny music, dodododododo*

I have done this to mix it up before:

add green beans or corn

or

last night I added cream of chicken with rice instead of plain C o C

or

add noodles (shells I prefer) and then sprinkle some cheese on top of the crackers

We love that one. I usually dice the chicken and serve it over angel hair pasta

yum, that's a good one! We call it "Miss Jane's Poppyseed Chicken" after a woman from church who always made it. She's since moved to a different state but all of my church friend's still call it that, and if you mention "Miss Jane's Chicken" anyone we know knows what we're talking about! :)

I have to add that when I make it, I often split it into 2 portions before cooking, and freeze 1/2 of it. It freezes GREAT - I just defrost, add the butter and crackers before cooking, and it's a done deal!
